Tasting Notes: You're immediately drawn into the glass as notes of lime and wet stonewith hints of chalk and citrus blossom to greet you on the nose.  The palate follows the nose, and is well-balanced between citrus and minerality with a gentle reminder of kaffir lime leaves.  Bright, elegant acidity leads to a lingering stony finish. 
Recommended Pairings: Great with fresh uni, or bigeye tuna tartare.
